Super Easy Roasted Veggies

This is actually one of my favorite go to recipes. It takes seconds to prepare and is basically a “fire and forget” method of making crazy delicious vegetables that everyone will enjoy.

I generally use broccoli & cauliflower for this recipe, but you can easily add or swap different squash, bell peppers, or brussels sprouts in place. Really whatever you enjoy will work for this recipe.

You will need about 1 cup of vegetables per person, and I alway double up so I have easy let overs for the next day (pro tip coming at you right there).

Option 1: Oven Method

  1. Preheat Oven to 350
  2. Trim your vegetables an cut into equal portions.
  3. Place vegetables in a mixing bowl.
  4. Add 2 teaspoon olive oil.
  5. Add dash (or more) of favorite seasoning salt. I prefer Garlic Salt, but hey, go crazy here. N one is going to judge you.
  6. Add any herbs or additional spices. i like a pinch of oregano or “Italian seasoning” for this.
  7. Toss to coat.
  8. Place vegetables in baking pan or cooking dish and bake for 20-30 minutes until cooked through and crispy.

Option 1: Air Fryer Method

  1. Preheat Air Fryer to 350
  2. Trim your vegetables an cut into equal portions.
  3. Place vegetables in a mixing bowl.
  4. Add 2 teaspoon olive oil.
  5. Add dash (or more) of favorite seasoning salt. I prefer Garlic Salt, but hey, go crazy here. N one is going to judge you.
  6. Add any herbs or additional spices. i like a pinch of oregano or “Italian seasoning” for this.
  7. Toss to coat.
  8. Place vegetables in Air Fryer basket.
  9. Add a dash of water (this is important. It will help steam the vegetables as the crips up).
  10. Set air fryer for 5 minutes and cook until and crispy edges appear.
